Preparation Steps
- In a bowl, combine ½ cup of flour with ½ cup of cornstarch. Season chicken with salt and pepper, then coat it in the flour-cornstarch mix.
- Heat ½ cup of oil in a skillet over medium-high heat. Fry the chicken for 4-5 minutes on each side until golden brown, then keep warm.
- In the same skillet, add minced garlic and ginger. Sauté for 1-2 minutes until fragrant. Then pour in ¼ cup of soy sauce and 2 tablespoons of honey. Simmer for 3-4 minutes.
- Return the crispy chicken to the skillet and toss it in the sauce for 2-3 minutes until well-coated.
- In a separate pan, heat 1 tablespoon of oil over medium heat. Sauté chopped vegetables for 3-4 minutes, then stir in the day-old rice and season with soy sauce.
- Serve the fried rice topped with crispy chicken and drizzle with remaining sauce. Garnish with fresh herbs.
