- Fill a large pot with salted water and bring it to a rolling boil. Carefully add the baby potatoes and cook for 15-20 minutes until fork-tender. Drain and let cool slightly.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or drizzle with olive oil.
- Place the potatoes on the prepared baking sheet, and gently flatten each potato to about ½-inch thickness.
- In a medium-sized bowl, mix together olive oil, melted butter, minced garlic, salt, pepper, smoked paprika, and dried oregano.
- Generously brush the seasoning mixture over each smashed potato and sprinkle grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes until golden brown and crispy. Optionally broil for an extra 2-3 minutes.
