  • 3 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Butter or vegan butter for a plant-based alternative

  • 4 cloves Minced Garlic fresh preferred
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
  • 1 teaspoon Smoked Paprika substitute with regular paprika or garlic powder
  • 1 teaspoon Dried Oregano or Italian seasoning
For the Topping
  • 1 cup Grated Parmesan Cheese or nutritional yeast for a vegan option

Method
 

Step‑by‑Step Instructions
  1. Fill a large pot with salted water and bring it to a rolling boil. Carefully add the baby potatoes and cook for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or drizzle with olive oil.
  3. Place the potatoes on the prepared baking sheet, and gently flatten each potato to about ½-inch thickness.
  4. In a medium-sized bowl, mix together olive oil, melted butter, minced garlic, salt, pepper, smoked paprika, and dried oregano.
  5. Generously brush the seasoning mixture over each smashed potato and sprinkle grated Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes until golden brown and crispy. Optionally broil for an extra 2-3 minutes.
  7. Remove from oven, allow to cool briefly, and sprinkle with chopped parsley and red pepper flakes if desired. Serve immediately.
