- In a large bowl or ziplock bag, combine chicken wings with peanut oil, Shaoxing wine, light soy sauce, ground ginger, sugar, salt, garlic powder, and white pepper. Mix everything until the wings are well-coated in the savory marinade. Allow the wings to marinate in the refrigerator for at least 2 hours, or for the best flavor, overnight.
- Preheat your air fryer to 350°F (176°C). Ensure it’s well-heated.
- Drain excess marinade from the wings and pat them dry with paper towels. Toss the wings in a mixture of cornstarch and all-purpose flour until evenly coated.
- Place the coated wings in the air fryer basket in a single layer, skin side down. Lightly spray with oil and cook for 12 to 15 minutes, flipping halfway through.
- Remove the wings from the air fryer and serve on a plate, optionally with lemon juice or dipping sauces.
