- Preheat the oven to 375°F (190°C). Gather your ingredients and baking dish.
- In a large skillet over medium heat, add olive oil, minced garlic, and chopped onion. Sauté for 3-4 minutes until the onion becomes translucent. Add spinach and cook until wilted, about 2-3 minutes.
- In a mixing bowl, combine ricotta cheese, shredded chicken, and sautéed vegetables. Mix well, then fold in half of the mozzarella.
- Layer crushed tomatoes at the bottom of the baking dish, followed by noodles, half of the filling, more noodles, the remaining filling, and top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 30 minutes. Remove foil, then bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
- Let cool for 10-15 minutes before serving.
