  1. Begin by steaming or sautéing 9 oz. of fresh spinach in a medium skillet over medium heat for about 3-5 minutes, until wilted. If using frozen spinach, ensure it’s fully thawed and then squeeze out excess water.
  2. In a high-speed blender, combine 1.5 cups of cottage cheese, 2 tablespoons of mayonnaise, 1 teaspoon of onion powder, and 0.5 to 1 teaspoon of garlic powder. Blend for about 30 seconds until smooth and creamy. Season with 0.5 teaspoon of kosher salt and ground black pepper to taste.
  3. Transfer the cream mixture into a large mixing bowl. Gently fold in the finely chopped spinach until thoroughly incorporated.
