For the Vegetables

Method
 

Step-by-Step Instructions
  1. Pat dry the chicken breasts, season with salt, pepper, paprika, and thyme.
  2. In a saucepan, bring chicken broth to a boil, add rice, cover, and simmer for 18-20 minutes.
  3. Heat olive oil in a skillet and sear chicken for 5-7 minutes on each side until golden brown.
  4. In the same skillet, sauté onion for 3-4 minutes, then add garlic and cook for another minute.
  5. Deglaze with chicken broth, stir in heavy cream and peas, return chicken, and simmer for 10-15 minutes.
  6. Serve over a bed of rice, garnish with parsley.
