Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wrap a whole bulb of garlic tightly in aluminum foil and roast for 30–35 minutes until golden and soft.
  2. Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  3. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add mashed roasted garlic cloves to the oil, creating a fragrant base.
  4. Pour in 1 cup of heavy cream and heat through for 3–4 minutes without boiling.
  5. Squeeze in the fresh lemon juice and add lemon zest. Stir in salt and black pepper to taste, cooking for an additional 2 minutes.
  6. Gradually add 1/2 cup of grated Parmesan cheese and stir until melted and combined.
  7. Toss the drained pasta with the sauce, adding reserved pasta water as needed to achieve desired consistency.
  8. Transfer the pasta to serving plates and garnish with fresh parsley.

Notes
