- Preheat your oven to 400°F (200°C). Wrap a whole bulb of garlic tightly in aluminum foil and roast for 30–35 minutes until golden and soft.
- Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add mashed roasted garlic cloves to the oil, creating a fragrant base.
- Pour in 1 cup of heavy cream and heat through for 3–4 minutes without boiling.
- Squeeze in the fresh lemon juice and add lemon zest. Stir in salt and black pepper to taste, cooking for an additional 2 minutes.
- Gradually add 1/2 cup of grated Parmesan cheese and stir until melted and combined.
- Toss the drained pasta with the sauce, adding reserved pasta water as needed to achieve desired consistency.
- Transfer the pasta to serving plates and garnish with fresh parsley.
