Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8–10 minutes. Reserve a cup of pasta water, then drain.
  2. Sauté the Pancetta: In a skillet, heat olive oil. Add diced pancetta and sauté until crispy, about 4–5 minutes. Transfer to a paper towel-lined plate.
  3. Prepare the Sauce: In the same skillet, add garlic and sauté until fragrant. Pour in heavy cream and simmer for 3–4 minutes.
  4. Mix Ingredients: Add cooked pasta and peas to the skillet, stirring well to combine. Gradually add reserved pasta water for desired creaminess.
  5. Finish with Cheese: Remove from heat and stir in Parmesan until melted. Adjust seasoning if needed, then fold in pancetta.
  6. Serve Immediately: Serve hot, garnished with additional Parmesan or fresh herbs if desired.
