Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with olive oil or non-stick spray.
  2. In a large pot of salted boiling water, cook the high protein pasta, but 1-2 minutes less than package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced chicken and sauté for 5-7 minutes until golden and cooked through. Add broccoli and cook for an additional 3-4 minutes.
  4. In a blender, combine cottage cheese, Greek yogurt, Parmesan cheese, garlic, chicken broth, milk, Italian seasoning, salt, and black pepper. Blend until smooth.
  5. In a large mixing bowl, combine sautéed chicken and broccoli with cooked pasta. Pour sauce over and mix well to coat.
  6. Transfer mixture to the greased baking dish, spreading evenly. Sprinkle shredded mozzarella cheese on top.
  7. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  8. Let rest for about 5 minutes before serving.

Notes
