  1. Begin by melting the white chocolate in a microwave-safe bowl for about 30 seconds to 1 minute, stirring until smooth. Dip the rims of two martini glasses into the melted chocolate, and roll the chocolate-covered rims in finely crushed gingerbread cookies. Set aside to cool.
  2. In a cocktail shaker, combine gingerbread vodka, half-and-half or cream, Irish cream, coffee liqueur, and ground ginger. Fill with ice and shake well.
