Step-by-Step Instructions
  1. In a blender or food processor, combine cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend on high speed for about 30 seconds until the mixture is smooth and creamy.
  2. Spoon the mousse into four serving glasses, evenly dividing the mixture.
  3. Place the filled glasses into the refrigerator and allow them to chill for at least 1 hour.
  4. Just before serving, add fresh raspberries and mint leaves on top of each glass.
