Step-by-Step Instructions

  2. In a large mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey if desired, baking powder, and salt. Mix well until fully combined.
  3. Let the batter sit for about 5 minutes to allow oats to absorb some moisture.
  4. Fill the muffin cups nearly to the top with the batter, leaving a tiny bit of space.
  5. Bake for 18-20 minutes or until set in the center and lightly golden on top.
  6. Remove from the oven and let cool in the pan for about 5 minutes.
