Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lining it with parchment paper or aluminum foil.
  2. In a large mixing bowl, whisk together ½ cup of melted unsalted butter and 1 cup of brown sugar until creamy and smooth.
  3. Add in 1 egg, 1 teaspoon of vanilla extract, 2 ripe bananas (mashed), and ½ cup of peanut butter. Stir mixture well until fully combined.
  4. Gently stir in ½ teaspoon of salt, 1 teaspoon of baking soda, and 1 cup of all-purpose flour. Mix until just combined.
  5. Add 1 cup of Ghirardelli semi-sweet chocolate chips to the batter and fold them in gently.
  6. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  7. If using, press peanut butter cups into the top of the batter.
  8. Bake for 25–35 minutes, checking for doneness by inserting a toothpick into the center.
  9. Once baked, allow your Chunky Monkey Blondies to cool in the pan for about 15 minutes before slicing.
