Step-by-Step Instructions for Chicken Fajita Burgers
  1. In a small bowl, mash together one ripe avocado with chopped cilantro, diced onion, garlic powder, lime juice, and a pinch of salt until smooth and creamy.
  2. In a large bowl, combine the ground chicken with freshly chopped cilantro, lime juice, chili powder, cumin, oregano, garlic powder, salt, and pepper. Mix with hands until just combined.
  3. Heat olive oil in a skillet over medium-high heat. Add sliced red bell pepper and yellow onion, and sauté for 6-8 minutes until soft.
  4. Add more olive oil to the hot skillet and cook the chicken patties for 4-5 minutes on one side. Flip them, place cheese on top, and cook for an additional 5 minutes.
  5. Toast your buns in the skillet, place each patty on a bun, and top with sautéed peppers and onions, and a dollop of guacamole.
