  • 0.5 cup additional sugar for rolling

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg and beat until fully combined, creating a smooth batter.
  4. Mix flour, baking powder, and salt in another bowl, then gradually add to the butter mixture until a dough forms.
  5. Divide the dough into 3-4 portions and mix in the Jello powder to each portion until colors are evenly distributed.
  6. Chill dough portions wrapped in plastic wrap for about 15-20 minutes.
  7. Roll dough into 1-inch balls, coat in additional sugar, and place on the baking sheets about 2 inches apart.
  8. Bake for 8-10 minutes until edges are set and tops are slightly crackled.
  9. Cool on baking sheets for 2 minutes before transferring to a wire rack to cool completely.
