  • 1/2 cup Granulated Sugar Adjust based on cherries' sweetness
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Almond Extract Optional
For the Muffin Batter
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Cold Unsalted Butter Cut into pieces
  • 1 cup Buttermilk Or milk with lemon juice/vinegar
  • 1 large Egg Beaten
For the Crumble Topping
  • 1 teaspoon Ground Cinnamon
  • 1/2 cup Brown Sugar
  • 1 cup All-Purpose Flour
  • 1/2 cup Cold Unsalted Butter Cut into pieces

Method
 

Preparation
  1. Prepare Cherry Filling: In a saucepan, combine cherries, granulated sugar, and cornstarch. Cook for 5-7 minutes until bubbly. Stir in lemon juice and almond extract, let cool.
  2. Make Muffin Batter: Preheat oven to 400°F (200°C). In a bowl, whisk flour, sugar, baking powder, baking soda, and salt. Cut in cold butter until crumbly. In another bowl, mix buttermilk, egg, and vanilla. Combine with dry ingredients until just mixed.
  3. Create Crumble Topping: In a bowl, mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  4. Assemble Muffins: Spoon batter into liners, add cherry filling on top, and sprinkle crumble. Bake for 18-22 minutes until a toothpick comes out clean.
  5. Cool & Serve: Let muffins cool for a few minutes, transfer to a wire rack. Enjoy!
