Cooking Instructions
  1. In a rice cooker or saucepan, combine white rice, tomatillo salsa, water, and salt. Cook according to instructions or simmer for about 18-20 minutes until tender.

  3. Fluff the cooked rice with a fork and transfer to the greased dish. Layer rinsed black beans evenly over the rice and sprinkle cheese on top.
  4. Bake for 5-7 minutes until cheese is melted and bubbly. Keep an eye to avoid burning.
  5. Let cool for a minute before serving hot as a side or on its own.
