For the Glaze
  • 1/4 cup Grapefruit Juice Fresh juice preferred
  • 1/2 cup Granulated Sugar Adjust for sweetness preference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a mixing bowl, whisk together Greek yogurt, granulated sugar, and eggs until smooth.
  3. Drizzle in vegetable oil while whisking, then fold in grapefruit juice and zest.
  4. In a separate bowl, sift together flour, baking powder, and salt.
  5. Gradually add dry mixture to wet ingredients, stirring until just combined.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, mix grapefruit juice and sugar until smooth.
  10. Brush the glaze over the cooled cake before serving.
