Step-by-Step Instructions
  1. Prepare the chicken by patting the thighs dry and seasoning with kosher salt and black pepper. Allow to rest for 15-20 minutes.
  2. Sear the chicken in a skillet with olive oil and butter for 8-10 minutes skin-side down, then flip and cook for 5-6 minutes.
  3. Cook bacon in the same skillet until crispy, then add mushrooms and shallots, sautéing until softened. Add garlic and cook until fragrant.
  4. Sprinkle flour into the mixture and cook for 1 minute to thicken.
  5. Pour in wine and scrape the skillet to deglaze; simmer for 2 minutes. Add chicken broth, thyme, bay leaf, and return chicken to skillet.
  6. Cover and simmer for 12-15 minutes until chicken is tender.
  7. After cooking, stir in heavy cream and adjust seasoning. Return chicken to pan to coat in sauce.
  8. Serve chicken over mashed potatoes, garnish with parsley and flaky sea salt.
