- Prepare the chicken by patting the thighs dry and seasoning with kosher salt and black pepper. Allow to rest for 15-20 minutes.
- Sear the chicken in a skillet with olive oil and butter for 8-10 minutes skin-side down, then flip and cook for 5-6 minutes.
- Cook bacon in the same skillet until crispy, then add mushrooms and shallots, sautéing until softened. Add garlic and cook until fragrant.
- Sprinkle flour into the mixture and cook for 1 minute to thicken.
- Pour in wine and scrape the skillet to deglaze; simmer for 2 minutes. Add chicken broth, thyme, bay leaf, and return chicken to skillet.
