For the Crumble

  • 1/2 cup Walnuts Adds a delightful crunch; substitute with pecans.
For the Stewed Apples
  • 2 tablespoons Apple Butter Enhances sweetness and flavor; sautéed apples serve as a substitute.

Method
 

Directions
  1. Blend the Base: In a blender, combine the soy yogurt, apple butter, Medjool dates, miso paste, vanilla extract, cinnamon, cardamom, a pinch of salt, and soy milk. Blend on high for 30-40 seconds until smooth.
  2. Prepare the Chia Pudding: In a bowl, whisk together the chia seeds with the blended mixture until combined. Let it sit for 5 minutes, then whisk again. Transfer to the refrigerator for at least 1 hour.
  3. Make the Crumble: Pulse oats, walnuts, Medjool dates, and salt in a food processor until crumbly.
  4. Sauté the Apples: Heat a pan over medium-low heat. Add diced apples, maple syrup, cinnamon, and water. Sauté for 3-4 minutes until softened.
  5. Assemble the Pudding: In jars, layer chia pudding, stewed apples, and crumble. Optionally drizzle with apple butter and maple syrup.

Notes

Use an immersion blender for easier cleanup. Adjust milk for desired pudding thickness. This pudding can also be served as dessert.
