- Blend the Base: In a blender, combine the soy yogurt, apple butter, Medjool dates, miso paste, vanilla extract, cinnamon, cardamom, a pinch of salt, and soy milk. Blend on high for 30-40 seconds until smooth.
- Prepare the Chia Pudding: In a bowl, whisk together the chia seeds with the blended mixture until combined. Let it sit for 5 minutes, then whisk again. Transfer to the refrigerator for at least 1 hour.
- Make the Crumble: Pulse oats, walnuts, Medjool dates, and salt in a food processor until crumbly.
- Sauté the Apples: Heat a pan over medium-low heat. Add diced apples, maple syrup, cinnamon, and water. Sauté for 3-4 minutes until softened.
- Assemble the Pudding: In jars, layer chia pudding, stewed apples, and crumble. Optionally drizzle with apple butter and maple syrup.
